Our tasting menu features the highest quality ingredients grown across Hong Kong’s zero-pesticide, zero-chemical, and organic farmers. While over 90% of food in Hong Kong is imported, we are proud to inverse this industry norm and present a 90% homegrown menu which also features Porterhouse’s own dry-aged beef.

About Chef Tammie Tsang
Chef Tammie is a certified Functional Nutrition Consultant and professionally trained chef based in Hong Kong. She believes in health-supportive ingredient selection and listening to our bodies. She has worked in prestigious restaurants such as Blue Hill at Stone Barns (2 Michelin stars), and James Beard in New York (2 Michelin Stars) and Grassroots Pantry in Hong Kong. Chef Tammie advocates for consuming real and whole foods that are nutrient-dense and promotes sustainable and health-supportive choices in the kitchen. 

About Chef Mick Bolam
Hailing from Rutherford, a small town in New South Wales and with over 20 years of culinary experience under his belt, Chef Michael Bolam (Chef Mick) is specialized in international cuisine with a focus on broad European from Italian, French, contemporary Australian to traditional English fare and classic pub food. Carefully sharpening his skills throughout his career, Chef Mick has completed stints in Europe, from London’s Michelin-star scene to super yachts in the South of France.
